Raw (twice-filtered) small batch wildflower honey collected from rescued bees in Chattanooga, TN.

Honey is hand processed-the slow way- using an uncapping tool and a bucket. The honey runs through a fine filter and the process is then repeated. It's never heated so it still contains all the good stuff! It takes about 48 hours to process two full frames of honey.

My process takes longer than using an extractor (which I have but don't use) but since I deeply respect the contemplated process involved in making honey (1 bee will make 1/12 of a tsp in her lifetime) it's what I do.
